What is freeze drying and how does it work?
The best but also the most complex way to dry fruits is freeze drying. This technique is based on drying the fruit on extremely low temperatures. If you’re asking yourself how that is possible, here’s the answer: Only fresh and whole fruit goes in the process (usually berries- raspberries, blackberries, blueberries or strawberries but also apricots or apples). After selecting the fruit, it is frozen on pretty low temperatures that can go as low as -60 degrees Celsius. Then it is put into a vacuum and the low air pressure allows the fruit to dry. The whole process can last up to 40 hours and the fruits loose up to 90% of water.
Why choose freeze dried fruits?
Freeze dried fruits retain their chemical composition and volume. Product contamination isn’t a problem because most microorganisms can’t survive the process. Also the nutritional value, natural scent, aroma, taste and appearance stay the same and the shelf life is longer so it is a high quality product.
