The secret of a good kulen – family tradition and homemade recipe
Household family Hrubik is a guardian of rich folk gastronomic tradition of the Slovaks from the north of Vojvodina. Their production is special in many ways. Petrovska klobasa (kulen) is not industrial neither semi-industrial product, but 100% homemade, quality. The recipe that great-grandfather left to grandchildren has not been changed not even today. This kulen is made from local pork, peppers, litlle salt and cinnamon. And no, it’s not like every other – here is what is special about.
Kulen with protected geographical origin
The Hrubik family has its own agricultural household. They founded a farm with pigs, but also red peppers and herbs. In process of preparing kulen they use only first class pork meat from its farm, but also homemade red pepper and cinnamon – we know exactly the origin of each ingredient of Petrovska klobasa. The technique of production is transferred from generation to generation, and the traditional recipe of great-grandather it has never been failed.
Family knowledge and tehnique
The Hubrik family is not interested in modern technology and artificial dryers that can ripen kulen in two months. They go for a longer, but more quality way. The kulen is dried naturally, in a clean, fresh air, and ripes at least 6 months. For this traditional delicates from Backi Petrovac they don’t separate in particular the neck, ham or back, but only use meat of whole pig, with a certain percentage of fat. They don’t put any preservatives, additives, artificial colours and aromas – that piquant, authentic taste of the kulen from Petrovac is 100% homemade! The kulen mixture is filled in natural hose. Such a product was given a mark of protected geographical origin and a protected name – Petrovska klobasa from Backi Petrovac. And do you know from where unforgettable taste comes? The secret is in a very mild, cold smoke above the dry wood that draws the note and leaves a trail for a recognizable taste which you can not resist!
